  • 6 oz extra firm tofu
  • 1 can bamboo shoots
  • 1 can mushrooms
  • 8 cups water
  • 6 cubes chicken bouillon
  • 1 packet sugar substitute
  • 2 tbsps soy sauce
  • 3 tbsps rice vinegar
  • 1 tsp sesame oil
  • 1/4 cup green onion
  • 1 dash white pepper
  • 1/3 tbsp hot chili oil
  • 16 oz Italian sausage
  • 2 cups bok choy

Directions

  • Scramble sausage in large pot.
  • Add water and bouillon, allow to boil.
  • Add tofu, mushrooms, and bamboo shoots. Bring back to boil.
  • Stir in soy sauce, sugar substitute, rice vinegar, sesame oil, white pepper and chili oil.
  • Add bok choy and green onions, bring to boil for 4 minutes and serve.
