  • 2 medium carrots, chopped
  • 8 cups vegetable broth
  • 15 oz canned diced tomatoes
  • 1 cup chopped onions
  • 1 tbsp leaves thyme
  • 1 tbsp black pepper
  • 3 cups water
  • 1 tbsp chipotle chili powder
  • 14 oz lean smoked turkey sausage
  • 2 1/2 cups mixed dried beans

Directions

  • Combine all ingredients in slow cooker.
  • Cook on high 3 hours, turn down to low.
  • Cook 6-8 hours or until beans are done.
  • Serve with a dash (or 3!) of hot sauce and enjoy.
  • Note: this keeps and freezes beautifully and is a great go-to lunch to take to work and/or perfect to cook in advance and pull out on nights when you don't feel like making dinner.
