  • 1 large onion
  • 1 clove garlic
  • 1 medium carrot
  • 1 large head cauliflower
  • 1 tbsp cumin
  • 5 cups vegetable stock

Directions

  • Soften the onion and garlic.
  • Dice the carrot and add cauliflower in small florets.
  • Sprinkle cumin over the top. Allow to sweat for a few minutes.
  • Cover with stock and allow to simmer until vegetables are tender, use a blender to liquidate the soup.
