  • 2 tbsps olive oil
  • 1 packet onion soup
  • 43 1/2 fl oz chicken broth
  • 1/2 head medium cabbage, shredded
  • 2 large carrots, chopped
  • 2 stalks large celery, chopped
  • 2 cloves garlic
  • 1 large onion, chopped
  • 1 medium potato, chopped
  • 2 cups sliced yellow squash
  • 1 large zucchini, chopped
  • 3 cans diced tomatoes
  • 2 cups water
  • 8 oz mushrooms, chopped

Directions

  • Heat the olive oil in a large stock pot over medium heat.
  • Add the carrots, celery, and onion until tender. Add the garlic and sauté until fragrant.
  • Add the chicken stock (low fat if available) and tomatoes. Bring to a boil.
  • Add the potato, zucchini, yellow squash, mushrooms, and cabbage.
  • Reduce heat, simmer, and serve!
