Seasoned Tomato Soup

A lovely soup during a cold night.

Ingredients

  • 42 oz organic tomatoes, diced
  • 20 oz chicken broth
  • 1 medium red onion, chopped
  • 4 cloves garlic
  • 2 tbsps basil
  • 2 tbsps sea salt
  • 1 tbsp pepper
  • 1 tbsp olive oil
  • 1 cup soy milk

Directions

  • In a large pot add the olive oil and bring to medium heat. Chop onion and garlic.
  • Add to pot and sauté in olive oil. Add the basil, oregano, or any Italian spice mix to the pot and mix.
  • After onion and garlic is sauteéd for about 5 minutes add tomatoes and chicken broth to the pot. Add salt and pepper.
  • Bring to a boil for about 15 minutes. Turn off the stove and let it cool for about 5 minutes.
  • After the soup has cooled for a bit, put into a blender or blend (in the pot) with a handmixer till smooth.
  • Put it back in the pot if you used a blender. Add soy milk if you like it creamy.
  • Reheat soup till hot and serve.
  • Note: my son loves this and would suggest his mommy's turkey bacon BLT sandwiches as an accompaniment.
