  • 64 fl oz tomato juice
  • 6 cubes chicken stock cubes
  • 1 package corn
  • 1 package frozen green beans
  • 1 package frozen peas
  • 2 cans diced tomatoes
  • 1 1/2 cups kidney beans
  • 1 package spinach
  • 1 package frozen carrots
  • 6 cups water

Directions

  • In a large pot add tomato juice, chicken stock cubes, corn, carrots, green beans, kidney beans, diced tomatoes and 6 - 8 cups of water.
  • Bring to boil and simmer for 20 minutes.
  • Add green peas and spinach.
  • Simmer for about 5 minutes until peas are heated through.
