  • 2 tbsps butter
  • 1/4 tsp leaves basil
  • 1 tsp cajun spices
  • 1/4 tsp pepper flakes
  • 1/4 tsp leaves thyme
  • 1 g whole bay leaf
  • 1 1/2 tsps salt
  • 3 cloves garlic, minced
  • 3/4 cup chopped green onions
  • 1 cup chopped green pepper
  • 4 cups v8 juice
  • 1 cup chopped red pepper
  • 1 cup water
  • 1 1/3 lbs shrimp, peeled
  • 3/4 cup long-grain white rice
  • 15 oz black beans, canned

Directions

  • Sauté peppers, onions, and garlic in melted butter over medium heat until tender for about 6 minutes.
  • Add the juice, water, and seasonings and bring to a boil.
  • Stir in the rice and beans. Cover and simmer for 18 minutes.
  • Add shrimp (deveined, tails removed, and cut into two pieces) and cook for 6 minutes.
