  • 4 cups red beans
  • 32 oz crushed tomatoes
  • 18 oz extra lean ground beef
  • 2 cups chopped green pepper
  • 1 cup chopped onion
  • 2 medium carrots
  • 4 cloves garlic
  • 1 tsp red pepper flakes
  • 1 tsp black pepper
  • 1 tsp sea salt
  • 2 tbsps olive oil
  • 2 cups chopped celery
  • 1/8 cup chili sauce (2 tbsp)
  • 3 tsps packed brown sugar
  • 1 tsp cumin
  • 1 tsp ground oregano
  • 1 tbsp cocoa
  • 1 tsp baking soda
  • 3 fl oz red wine
  • 2 chili peppers

Directions

  • In a large pot with a heavy bottom, brown the 95% lean ground beef, remove from pan and set aside on paper towels to drain.
  • Add olive oil to the pan, then add all vegetables, except the canned tomatoes, sweat until crisp tender.
  • Add seasonings, stir and add wine, cook for two minutes, add the remaining ingredients and bring to a simmer.
  • Let cook over low heat for at least an hour, or until the vegetables are fully softened.
  • Adjust seasonings to taste.
