  • 1 1/4 lbs ground turkey
  • 1/2 cup chunky salsa
  • 4 oz shallots, finely chopped (1/2 cup)
  • 1/4 cup cilantro, finely chopped
  • 3 tbsps olive oil
  • 3 tsps chipotle flavored hot sauce
  • 1 tbsp cumin
  • 1 dash salt
  • 4 leaf medium boston lettuce
  • 4 slices, medium tomato
  • 1 dash pepper

Directions

  • Mix ground turkey (lean if available), 1/2 cup mild or medium chunky salsa, shallots, cilantro, 3 tablespoons oil, hot sauce, cumin, salt, and pepper in large bowl.
  • Shape turkey mixture into four 3 1/2 to 4" diameter patties on wax paper.
  • Heat cooking spray in large non-stick skillet over medium-high heat.
  • Add burgers; cook until brown, about 3 minutes per side. Do not move around burgers until they have browned or they will fall apart.
  • Reduce heat to low. Cover pan and sauté burgers for 2 minutes.
  • Flip, and add a slice of low-fat cheese. Cover and sauté until burgers are cooked through and cheese is melted - another 2 minutes.
  • Arrange lettuce leaves on 4 plates. Top each lettuce leaf with a tomato slice and burger. If allowed, enjoy on a toasted whole wheat roll.
  • Note: these burgers freeze great - just put them between sheets of wax paper and throw them on the skillet for a quick and easy dinner! Also, you can try making 8 smaller burgers for kids or portion control.
