- 10 servings 2 slices chicken breast, diced
- 2 cups cottage cheese, low fat
- 12 oz salsa
- 16 oz mexican blend shredded cheddar cheese, low fat
- 6 corn tortillas, cut into squares
- 12 oz black beans
Directions
- Spray casserole dish with cooking spray like Pam.
- Layer the bottom with the tortilla squares.
- Layer next with diced chicken.
- Mix together cottage cheese, black beans and salsa.
- Pour mixture over the chicken layer.
- Make the top layer the cheese.
- Bake in oven at 350° F (175° C) for 30 minutes.
