Ingredients

  • 3 tsps unpacked brown sugar
  • 2 tbsps honey
  • 1/4 cup soy sauce
  • 2 tsps grated fresh ginger
  • 2 tsps minced garlic
  • 2 tbsps sambal oelek
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 lb chicken tenders
  • 1 tbsp canola oil
  • 2 tbsps light agave nectar
  • 1/4 cup all-purpose flour
  • 1/2 cup roasted unsalted cashew nuts
  • 1/2 cup scallions, chopped

Directions

  • In a small bowl, mix together the soy sauce, sambal oelek, agave nectar, garlic, ginger, honey and sugar. Set aside.
  • Slice the chicken tenders into 1" segments.
  • In another bowl, mix together the flour, salt and pepper.
  • Lightly dredge the chicken in the flour mixture.
  • Heat the canola oil in a wok or large frying pan. Sauté the chicken in hot oil until it is no longer pink.
  • Pour the sauce over the chicken and simmer, stirring often, until the sauce is thick and bubbly.
  • Stir in the cashews. Sprinkle the top with sliced scallions.
