Ingredients
- 3 tsps unpacked brown sugar
- 2 tbsps honey
- 1/4 cup soy sauce
- 2 tsps grated fresh ginger
- 2 tsps minced garlic
- 2 tbsps sambal oelek
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 lb chicken tenders
- 1 tbsp canola oil
- 2 tbsps light agave nectar
- 1/4 cup all-purpose flour
- 1/2 cup roasted unsalted cashew nuts
- 1/2 cup scallions, chopped
Directions
- In a small bowl, mix together the soy sauce, sambal oelek, agave nectar, garlic, ginger, honey and sugar. Set aside.
- Slice the chicken tenders into 1" segments.
- In another bowl, mix together the flour, salt and pepper.
- Lightly dredge the chicken in the flour mixture.
- Heat the canola oil in a wok or large frying pan. Sauté the chicken in hot oil until it is no longer pink.
- Pour the sauce over the chicken and simmer, stirring often, until the sauce is thick and bubbly.
- Stir in the cashews. Sprinkle the top with sliced scallions.
