Ingredients

  • 2 tbsps extra virgin olive oil
  • 3/4 cup green olives
  • 1 1/2 cups water
  • 1 tsp crumbled bay leaf
  • 2 large carrots
  • 8 oz boneless skinless chicken breast
  • 3 cloves garlic
  • 1 cup chopped onions
  • 1 cup of couscous

Directions

  • Sauté onions in oil until soft.
  • Add chopped carrots and garlic, cook 2 minutes stirring frequently.
  • Add remaining ingredients except olives and couscous.
  • Cook 10 minutes under pressure, then lower pressure using cold-water-release method.
  • Add the olives, season with salt and pepper to taste.
  • Cook 3 more minutes under pressure, then lower using cold water method again.
  • Serve over 1/2 cup plain couscous.
