Ingredients

  • 1 medium yellow onion
  • 1/4 tsp sazon powder
  • 2 tbsps light sour cream
  • 3 medium skinless chicken breasts
  • 2 tbsps olive oil
  • 1 avocado
  • 1 medium green pepper
  • 2 cups brown rice
  • 1 cup tomato sauce

Directions

  • Prepare rice as directed. Sauté onion and green pepper in olive oil until tender.
  • Chop chicken breasts into bite-sized pieces and then add to green pepper and onion. Cook until done.
  • Add 1 packet of Sazón seasoning (found in the ethnic foods isle). Stir in rice and tomato sauce and allow to warm through.
  • Top with diced avocado and sour cream. Enjoy!
