Spicy Cilantro Chicken

Great flavored spicy chicken without being too spicy.

Ingredients

  • 2 tbsps soy sauce
  • 1/4 cup chopped green chiles
  • 6 fl oz lite coconut milk
  • 4 large chicken breasts
  • 3/4 cup lime juice
  • 1/4 cup cilantro, chopped
  • 2 cloves garlic

Directions

  • Put garlic, green chile, cilantro, lime juice, soy sauce and coconut milk in a food processor and process to a smooth puree.
  • Marinate chicken with about 1/2 of the puree for about an hour in the refrigerator.
  • Broil the chicken for 12 - 15 minutes.
  • Place the remaining marinade in a pot and bring to a boil.
  • Lower the heat and simmer for several minutes.
  • Pour over cooked chicken breasts.
