  • 1 oz plain skim yogurt
  • 1 tsp chili powder
  • 2 1/2 cups reduced sodium chicken broth
  • 1/2 tsp garlic
  • 1 cup chopped onion
  • 12 oz chicken breast, chopped
  • 4 oz green chili peppers
  • 38 oz cannellini beans

Directions

  • Coat a large pot with cooking spray. Over medium-high heat add onion and garlic and sauté until tender.
  • Add half of the beans, green chilis, broth, chicken, chili powder and salt.
  • Mash the remaining beans and add to pot.
  • Bring mixture to a boil, cover, reduce heat and simmer for about 20 minutes.
  • Top with a dollop of reduced fat yogurt (optional) and chili powder.
