Spicy Chicken Stir-Fry
Terrific chicken stir-fry that can use any vegetables you like.

Ingredients
- 1 lb chicken breast, boneless and skinless
- 2 cloves garlic
- 2 tbsps olive oil
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 cup chopped red pepper
- 1 hot chili pepper
- 1 1/2 oz cornstarch
- 6 tbsps soy sauce
- 1/2 cup chicken broth
Directions
- Sauté garlic and onion in olive oil for 3-5 minutes.
- Add sliced chicken to pan and cook until no longer pink.
- Add green pepper, red pepper, chili pepper, and chicken stock.
- Cook until vegetables are at a consistency that you prefer.
- In small bowl mix cornstarch with soy sauce.
- Add soy sauce mixture to stir fry stir, sauce will thicken.
- Serve over brown rice.
