Turmeric Ginger Chicken Saute

Ingredients

  • 1/4 tbsp paprika
  • 2 tsps turmeric
  • 1 tsp salt
  • 1 tbsp olive oil
  • 4 breasts, bone and skin removed chicken breast
  • 1/2 cup chopped red cabbage
  • 1 clove garlic
  • 2 tsps ginger
  • 1 tbsp chopped red onion
  • 1 tbsp parsley
  • 1/4 cup chopped green bell pepper
  • 1 package spinach
  • 1/2 cup chopped bell pepper

Directions

  • Heat oil in a large non-stick skillet over medium-high heat.
  • Add bell peppers and sauté 1 minute.
  • Add onion and sauté 1 minute.
  • Reduce heat to medium; stir in cabbage, ginger, and garlic. Cook for 3 minutes, stirring constantly.
  • Add chicken and remaining ingredients except for spinach. Cook 5 minutes stirring frequently.
  • Stir in drained spinach and reduce heat to low. Cook 10 minutes or until chicken is done.
