Ingredients

  • 1/8 tsp creole seasoning
  • 1/2 cup diced canned tomatoes
  • 1 cup cooked white rice
  • 1 tbsp garlic powder
  • 1 dash pepper
  • 1 dash salt
  • 3 sprigs fresh cilantro
  • 6 oz tilapia fillets

Directions

  • Pre-heat oven to 400° F (200° C) and spray baking sheet.
  • Cover both sides of fish with creole seasoning, then salt and pepper to taste.
  • Bake for 10-12 minutes.
  • To cooked rice, add tomatoes, cilantro, creole seasoning and garlic powder
  • Continue cooking rice mix on low until fish is cooked, stirring occasionally and adding water if needed to keep from stick to bottom of pan.
  • Enjoy.
