Warm Lamb Salad with Black Olives

Ingredients

  • 15 g butter
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 10 spears medium asparagus, chopped coarsely
  • 1 clove garlic, crushed
  • 25 g black olives, sliced
  • 150 g button mushrooms, quartered
  • 200 g red capsicum, chopped coarsely
  • 80 g baby rocket leaves
  • 500 g lamb fillet

Directions

  • In a large non-stick fry pan cook lamb until brown and cooked as desired.
  • Slice lamb and combine it with garlic, vinegar, oil and olives in a large bowl.
  • Heat butter in pan and cook asparagus, capsicum, mushrooms, stir until asparagus is tender.
  • Add to lamb mixture in the bowl and toss gently.
  • Serve lamb mixture with rocket.
  • Note: you can use lamb cutlets, chops or fillets.
