Shrimp with Zucchini

This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta.

Ingredients

  • 2 tbsps olive oil
  • 4 cloves garlic
  • 1/2 cup pieces or slices fresh mushrooms
  • 1/2 cup chopped onion
  • 2 medium zucchini
  • 15 medium shrimp
  • 1/4 cup grated parmesean cheese

Directions

  • Heat olive oil in fry pan.
  • Add chopped onion and minced garlic cloves. Cook until softened.
  • Peel zucchini and slice lenghwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
  • Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
  • Top with cheese and serve with green salad.
  • Note: great for Phase 2 and 3 of South Beach.
