Spaghetti Squash with Turkey Meat Sauce

A surprisingly good meal that will make you forget you're dieting.

  • 3 lbs spaghetti squash (1 medium)
  • 1 can tomatoes
  • 1 lb ground turkey
  • 1/2 cup chopped white onion
  • 2 cloves garlic
  • 1/4 cup chicken stock
  • 1 cup pieces or slices fresh mushrooms
  • 1 tbsp fennel seed
  • 1 oz coriander

Directions

  • Cook squash in oven until soft. Remove from oven and use fork to make "spaghetti".
  • While squash is cooking in the oven, puree tomatoes. Then put into medium sauce pan with fennel and heat on low for about 20 minutes.
  • In a non-stick skillet, sauté garlic, onions and mushrooms until onions are soft. Then add ground turkey and coriander and cook thoroughly.
  • Add the ground turkey mixture to the tomato sauce pan and let simmer for another 4-5 minutes.
  • Put "spaghetti" on plate and pour sauce on top.
  • Enjoy!
