Ingredients

  • 1 9" pie crust
  • 2 tsps olive oil
  • 3 tsps thyme
  • 3 1/2 oz sliced gruyere cheese
  • 3 medium whole tomato

Directions

  • Pre-heat oven to 410 °F (210 °C).
  • Prepare pie crust (pre-bake if necessary).
  • Slice tomatoes thinly, as well as cheese. Wash and chop thyme.
  • Place tomatoes, cheese, and thyme on crust, drizzle with olive oil. Season with salt and pepper to taste.
  • Bake for 30 minutes. Cool slightly and serve.
