  • 1/2 lb couscous
  • 1 lb shrimp, frozen
  • 1/3 cup fresh parsley, chopped
  • 1 tbsp olive oil
  • 2 cloves fresh garlic

Directions

  • Prepare couscous according to package directions.
  • Heat olive oil in a saucepan on medium heat. Add shrimp and garlic and cook until tender.
  • Once couscous is done (about 5 minutes) fluff with a fork and put on a platter.
  • Top with garlic shrimp.
  • Sprinkle chopped parsley on top and serve.
