Ingredients

  • 500 g cooked prawns, peeled
  • 2 tbsps olive oil
  • 3 cloves garlic, finely chopped
  • 1/4 red chili, finely chopped
  • 1/4 cup flat leaf parsley, chopped
  • 1 tbsp lemon rind
  • 40 g butter

Directions

  • Heat oil and butter in pan over medium heat.
  • Add garlic and chili stirring for 2-3 minutes.
  • Add parsley, lemon rind, and salt and pepper and combine.
  • Add prawns - heat through (don't leave them in too long otherwise they become rubbery).
  • Squeeze some lemon juice over the prawns.
  • Serve with salad and enjoy.
