  • 2 cups black beans
  • 6 tbsps tomato paste
  • 5 1/2 cups low sodium vegetable broth
  • 1/4 cup water
  • 1/2 cup salsa verde
  • 1 small onion
  • 1 tbsp cumin
  • 2 tbsps chili powder
  • 2 cups canned mushrooms
  • 8 oz 97% fat free white ground turkey

Directions

  • Cook the ground turkey thoroughly, drain and return to the slow cooker.
  • Combine all other ingredients in the slow cooker.
  • Turn slow cooker heat to low. Put the lid on and cook until hot, 5 to 8 hours.
  • It can simmer in the slow cooker all day, which makes it perfect for a healthy supper when the end of your day is rushed.
