  • 16 oz black beans, dried and rinsed
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped
  • 5 cloves garlic, minced
  • 28 oz diced tomatoes with juice
  • 2 tbsps olive oil
  • 5 cups water
  • 4 tsps cumin, ground
  • 1/2 cup chopped or diced green chilies
  • 1 tsp salt

Directions

  • Mix all ingredients in crockpot.
  • Cover and cook on high for 6 to 8 hours, or until most liquid is absorbed.
  • Serve over warm brown rice or as a side to lean meat.
