- 1 tbsp olive oil
- 1 peeled eggplant
- 1 large red pepper
- 1 1/2 cups flowerets broccoli
- 6 cloves garlic
- 1/2 cup soy sauce
- 1/2 cup water
Directions
- Peel eggplant and chop all vegetables.
- Put all ingredients in non-stick pan and stir fry until tender. Cover for short periods if needed to speed up cooking process.
- Serve alone or over rice.
