Ingredients

  • 1/2 cup cooked pearl barley
  • 1/2 cup cooked brown rice
  • 1 cup black beans, drained
  • 1 cup canned kidney beans, drained
  • 1 cup corn kernels
  • 1/2 cup chopped green onions
  • 1/4 cup cilantro, chopped
  • 1/4 cup canola oil
  • 1 clove garlic, crushed
  • 2 tbsps vinegar
  • 1 tbsp honey
  • 1 dash salt, to taste
  • 1 dash pepper, to taste
  • 20 g sunflower seeds

Directions

  • In a large bowl, combine the cooked barley, rice, black beans, kidney beans, corn, onions, red bell pepper and cilantro. Mix well.
  • To make dressing in a small bowl, whisk together oil, vinegar, honey, garlic, salt and black pepper. Pour over salad and toss well.
