Ingredients

  • 1 sprig cilantro
  • 1/2 medium red onion
  • 1/2 medium red bell pepper
  • 2 medium tomatoes
  • 4 cups cooked cauliflower
  • 1 tsp ground oregano
  • 1 tsp salt
  • 1/4 olive oil
  • 1 avocado
  • juice of 1 lemon

Directions

  • Cook florets from one whole fresh cauliflower for 2-3 minutes. Drain and let it cool down.
  • Add chopped red bell pepper, red onion and tomatoes.
  • Add olive oil, lemon juice, salt, oregano and cilantro.
  • Mix.
  • Finally, add avocado chunks.
  • Leave it to cool down in refrigerator.
