Ingredients

  • 2 tsps lemon juice
  • 2 tbsps minced garlic
  • 1 medium red sweet pepper
  • 1 tsp cumin
  • 1 small red onion
  • 2 cups, dry, yields quinoa (cooked)
  • 1 tbsp red or cayenne pepper
  • 1/4 cup olive oil
  • 1 cucumber (with peel)

Directions

  • Cook quinoa as per package instructions. Let cool.
  • Slice vegetables into small 1/4” pieces.
  • Mix all ingredients in a large bowl.
  • Let sit overnight in fridge or until cold.
