Ingredients

  • 1 cup cherry tomatoes
  • 1/2 medium red onion
  • 1 large cucumber
  • 10 pitted greek kalamata olives
  • 1 cup garbanzo beans
  • 1/2 cup feta cheese
  • 1 tsp dijon mustard
  • 3 tbsps olive oil
  • 1 tsp ground oregano
  • 1 dash salt
  • juice from 1 lemon
  • 1 dash black pepper
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic

Directions

  • In a large bowl, combine sliced vegetables and cheese.
  • To make the dressing, mix olive oil, oregano, lemon juice, vinegar, garlic, mustard, salt, and pepper.
  • Pour dressing over salad and mix well.
