Ingredients
- 1 cup cherry tomatoes
- 1/2 medium red onion
- 1 large cucumber
- 10 pitted greek kalamata olives
- 1 cup garbanzo beans
- 1/2 cup feta cheese
- 1 tsp dijon mustard
- 3 tbsps olive oil
- 1 tsp ground oregano
- 1 dash salt
- juice from 1 lemon
- 1 dash black pepper
- 1 tbsp apple cider vinegar
- 2 cloves garlic
Directions
- In a large bowl, combine sliced vegetables and cheese.
- To make the dressing, mix olive oil, oregano, lemon juice, vinegar, garlic, mustard, salt, and pepper.
- Pour dressing over salad and mix well.
