- 1 cup shelled edamame, cooked
- 8 oz silken tofu, drained
- 1/2 tsp salt
- 3 cloves garlic
- 1/4 cup olive oil
- 1/3 cup lemon juice
- 1 1/2 tsps cumin
Directions
- Blend ingredients together in a food processor for about two minutes, until smooth.
- Season with salt, pepper, lemon juice, to taste.
- Garnish with a few extra edamame and cumin.
