  • 1 head romaine lettuce
  • 2 tbsps olive oil
  • 4 wedges yield lime juice
  • 1/2 cup chopped or sliced tomatoes
  • 4 oz olives, sliced
  • 1/4 medium cucumber, sliced
  • 0.12 cup cilantro, chopped
  • 1 oz red onion, sliced

Directions

  • Mix the lime with olive oil, salt and pepper. Set aside.
  • Toss all the other ingredients in a salad bowl.
  • Add dressing and toss.
