  • 1 cup baby spinach
  • 1 oz fat free feta cheese
  • 5 Kalamata olives
  • 1/4 cup chopped red onion
  • 1/5 package firm cubed tofu
  • 1 tsp canola oil

Directions

  • Saute chopped onion, tofu and olives in a pan with the canola oil.
  • Add in lightly chopped fresh spinach. Mix in until spinach wilts slightly.
  • Mix in feta and serve.
