  • 1/4 tsp kosher salt
  • 1/3 cup grated pecorino romano cheese
  • 1 tbsp fresh ground black pepper
  • 3 tbsps olive oil
  • 1 head large cauliflower
  • 6 cloves minced garlic
  • 1 tbsp chopped parsley

Directions

  • Pre-heat oven to 450 °F (220 °C) and lightly grease or apply cooking spray like Pam to large casserole dish.
  • Toss cauliflower in oil and minced garlic, coating well placing in dish.
  • Cover with aluminum foil and bake 25 minutes stirring halfway through.
  • Uncover, stir, and top with parsley and pecorino romano then broil 3-5 minutes until golden.
  • Salt and pepper to taste and serve.
