  • 1 cup italian dressing, low fat
  • 1 medium zucchini
  • 1 cup whole mushrooms
  • 1 peeled eggplant

Directions

  • Wash mushrooms, peel and slice zucchini and eggplant into long strips.
  • Marinate at least 2 hours in the low fat Italian dressing.
  • Grill on charcoal or gas grill until brown.
  • Note: mushrooms should be placed on skewers for ease of grilling.
