Ingredients
- 4 cups zucchini, chopped
- 2 large eggs
- 2 tbsps high fiber coconut flour
- 1/4 cup parmesan cheese, grated
- 1/4 tsp Italian Italian herb seasoning
Directions
- Grate zucchini.
- Mix all ingredients in a bowl.
- Add salt and pepper to taste.
- Spray cookie sheet with oil.
- Form into 8 patties.
- Bake at 400 °F (205 °C) for 20 minutes on each side.
