Ingredients

  • 4 cups zucchini, chopped
  • 2 large eggs
  • 2 tbsps high fiber coconut flour
  • 1/4 cup parmesan cheese, grated
  • 1/4 tsp Italian Italian herb seasoning

Directions

  • Grate zucchini.
  • Mix all ingredients in a bowl.
  • Add salt and pepper to taste.
  • Spray cookie sheet with oil.
  • Form into 8 patties.
  • Bake at 400 °F (205 °C) for 20 minutes on each side.
