- 1 lb carrots
- 1/4 cup crumbled feta cheese
- 1/4 cup greek yogurt
- 1 tbsp olive oil
- 1 tbsp cumin
- 1 tsp harissa
Directions
- Roast carrots coated in olive oil and ground cumin until tender and caramelized.
- Puree in processor with harissa and Greek yogurt and serve with olives and crumbled feta.
