Ingredients

  • 1 medium zucchini
  • 3 oz pork rinds
  • 1/4 cup parmesan cheese, grated
  • 1 large egg
  • 1 tbsp olive oil
  • 1 tbsp butter

Directions

  • Slice zucchini in 1/2" slices.
  • Dip in egg mixture and roll in the crushed pork rinds and grated parmesan or asiago cheese.
  • Fry in the olive oil and butter on medium heat.
  • Let cool on paper towel and serve.
