- 2 cups white beans
- 6 cups chicken stock
- 48 fl oz water
- 3/4 cup chopped carrot
- 3/4 small stalk celery
- 1 cup chopped onion
- 2 tbsp minced garlic
- 3 tsps ground oregano
- 1 tbsp rosemary
- 1 tsp thyme
- 1/4 tsp ground basil
- 1 cup cooked, diced fresh ham
Directions
- Put all ingredients together in soup pot and cook on high until it starts to boil stirring occasionally.
- Lower heat to medium and cook until done.
- Add water as pot water evaporates while cooking.
- Cooking time usually runs about 3-4 hours.
