Ingredients

  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 3 tsps ground oregano
  • 1 tbsp olive oil
  • 2 cups chicken broth
  • 3 tsps garlic
  • 1 large whole red tomato
  • 2 large bell peppers
  • 3 cups black beans

Directions

  • Chop pepper and garlic.
  • Place in stock pan with oil and cook till softened.
  • Add spices and cook on low for 5 minutes.
  • Rinse and drain beans. Add to pan along with chopped tomato add stock and simmer on low for 30 minutes.
