Ingredients

  • 1 lb spinach (chopped or leaf, frozen)
  • 1 medium onion
  • 2 tsps minced garlic
  • 2 tsps organic ghee clarified butter
  • 4 cups vegetable cooking stock
  • 3 1/2 cups fava beans

Directions

  • Chop onion and sauté on ghee. Add minced garlic.
  • Add vegetable stock, beans, and spinach. Bring to a boil.
