Ingredients
- 1 lb spinach (chopped or leaf, frozen)
- 1 medium onion
- 2 tsps minced garlic
- 2 tsps organic ghee clarified butter
- 4 cups vegetable cooking stock
- 3 1/2 cups fava beans
Directions
- Chop onion and sauté on ghee. Add minced garlic.
- Add vegetable stock, beans, and spinach. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Transfer to bowls then serve.
