Ingredients

  • 29 oz chicken broth, low-sodium
  • 1 cup water
  • 8 oz chicken tenders
  • 1/2 cup chopped onions
  • 1 cup strips or slices carrots
  • 1 cup chopped celery
  • 1 cup chopped zucchini
  • 1 cup pieces or slices mushrooms
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  • In stockpot, bring chicken broth and water to a boil. Cook chicken for about 5 minutes or until done. Remove chicken to cutting board and let it cool.
  • Add onion, carrots and celery. Boil for about 10 minutes or until vegetables are tender.
  • Add zucchini and mushrooms and cook for an additional 5-10 minutes.
  • Shred chicken with two forks and add to stockpot.
  • Add salt, pepper, and parsley.
  • Enjoy!
