Thai Ginger Soup
A simple and easy to prepare coconut milk based soup with chicken breast strips, ginger and cilantro.

Ingredients
- 0.12 cup cilantro
- 1/4 cup lime juice
- 1/3 cup fish sauce
- 3 tbsp ginger root
- 8 oz boneless skinless chicken breast
- 2 cups water
- 3 cups light coconut milk
Directions
- Pour the coconut milk and water into a saucepan, and bring to a boil.
- Add the chicken strips, and reduce heat to medium.
- Simmer for about 3 minutes, just until the chicken is cooked through.
- Stir in the ginger, fish sauce and lime juice.
- Sprinkle in the green onions and cilantro, and serve.
