Ingredients

  • 1 tbsp canola oil
  • 2 cups tomato sauce
  • 1 cup whole kernel corn
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/4 tsp red or cayenne pepper
  • 1/4 tsp salt
  • 2 cups pieces or slices mushrooms
  • 2 cups chopped onions
  • 1 cup chopped green pepper
  • 14 oz canned stewed tomatoes
  • 19 oz canned black beans
  • 14 oz canned red kidney beans

Directions

  • Heat cooking oil in large saucepan or Dutch oven on medium-high.
  • Add onions, mushrooms and green pepper.
  • Cook, uncovered, for about 5 minutes, stirring often, until onion is softened.
  • Add remaining ingredients. Stir. Bring to a boil.
  • Reduce heat to medium-low. Simmer, covered, for 10 minutes, stirring occasionally to blend flavors.
