- 3 tbsps olive oil
- 1/4 cup blanched almond flour
- 946 ml organic chicken stock
- 2 tbsps 100% organic lemon juice
- 150 ml organic fat free milk
- 800 g sliced mushrooms
Directions
- Wash the mushrooms thoroughly and slice thinly. Soak the mushrooms in water with lemon juice for 20 minutes.
- Put the olive oil in the pot. Add the mushrooms. When it starts to brown, add almond flour then stir. Add the cold milk and continue mixing. Slowly pour the chicken broth.
- When the soup starts to boil, season with salt and pepper as desired. Boil for 5 minutes on low heat.
