- 1 1/4 lbs lean ground turkey
- 16 oz cabbage coleslaw mix
- 46 oz tomato juice, low sodium
- 28 oz stewed tomatoes
- 40 oz tomatoes with green chilies
- 15 oz red kidney beans
- 15 oz red beans
- 15 oz black beans
- 1 cup chopped onion
- 1 clove garlic, minced
- 2 tbsps turkey rub seasoning
Directions
- Sauté onion and garlic until tender in a large stock pot.
- Add fresh ground turkey and brown.
- Add remaining ingredients to the large stock pot.
- Simmer for 1 hour - stirring frequently as cabbage likes to sink to bottom.
- Note: freezes very well.
