  • 1 1/4 lbs lean ground turkey
  • 16 oz cabbage coleslaw mix
  • 46 oz tomato juice, low sodium
  • 28 oz stewed tomatoes
  • 40 oz tomatoes with green chilies
  • 15 oz red kidney beans
  • 15 oz red beans
  • 15 oz black beans
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 2 tbsps turkey rub seasoning

Directions

  • Sauté onion and garlic until tender in a large stock pot.
  • Add fresh ground turkey and brown.
  • Add remaining ingredients to the large stock pot.
  • Simmer for 1 hour - stirring frequently as cabbage likes to sink to bottom.
  • Note: freezes very well.
