- 1/3 cup barley
- 2 large red potatoes
- 1 cup chopped carrots
- 1 cup chopped onions
- 1 cup chopped celery
- 6 cloves garlic
- 3 cups pieces or slices mushrooms
- 3 cups vegetable broth
- 1/2 tsp leaves thyme
- 1 dash salt
- 1 dash pepper
Directions
- Mix all ingredients in a large pot.
- Bring to a boil and lower heat to a simmer.
- Cover and cook for 30-45 minutes until vegetables are soft.
- Serve with crusty bread.
