Ingredients

  • 1 dash pepper
  • 1/2 tsp leaves thyme
  • 1 dash salt
  • 3 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 6 cloves garlic
  • 3 cups pieces or slices mushrooms
  • 1 cup chopped onions
  • 2 large red potatoes
  • 1/3 cup barley

Directions

  • Mix all ingredients in a large pot.
  • Bring to a boil and lower heat to a simmer.
  • Cover and cook for 30-45 minutes until vegetables are soft.
  • Serve with crusty bread.
