Ingredients

  • 2 lbs carrot
  • 1 sprig coriander
  • 1 large onion
  • 1/4 cup coriander
  • 1 dash seasoning
  • 40 fl oz vegetable stock

Directions

  • Stir fry the onion in low fat cooking spray for 5 minutes.
  • Add the sliced carrots, vegetable stock and seasoning (salt and pepper) to taste.
  • Simmer for 15 minutes until the carrots are tender.
  • Add the chopped coriander.
  • Liquidize and serve.
