Ingredients
- 2 tbsps olive oil
- 1 small onion, chopped
- 1/2 cup minced fresh ginger
- 3 medium pears, peeled, cored and sliced thin
- 2 cups pumpkin puree
- 1/4 tbsp nutmeg
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 4 cups 99% fat free chicken broth
Directions
- Put first four ingredients in a large soup pot and sauté until tender, about 10 minutes.
- Stir in remaining ingredients and bring to a boil, then reduce heat and simmer for 20 minutes.
- Puree in batches in a blender or use a stick blender to blend until soup is smooth.
